Recipe of the Month: Cauliflower and bean salad


Looking for a way to use your cauliflower? Cauliflower is a good source of protein, and is low in saturated fat. It is a great source of vitamin C, thiamin, dietary fiber, and vitamin B, so EAT UP!

Cauliflower and Bean Salad:

-1 large head of cauliflower, chopped into bite size pieces
-3 sprigs of thyme
-2 tbsp red wine vinegar
-1/3 cup oil
-1 fennel bulb, chopped
-1 can of white beans
-1 lemon (juiced)
-1/2 cup feta cheese (optional)
-salt and pepper to taste

Heat up oil in a skillet, add thyme and roast for a couple of minuets. In a large bowl, combine cauliflower, beans, and fennel. In a small bowl combine: red wine vinegar, and lemon juice. Toss cauliflower with lemon juice and red wine vinegar mixture. Add feta cheese and salt and pepper to taste.
